Burgetto-Fish soup from Galaxidi by Stella Senduka

Ingredients
 
1 1/2 kilo Different kinds of small size sea fish
1/4 shrimp
1 1/2 kilo Cod fish
1 1/2 kilo potatoes
3-4 red onions
Half water glass ESTI Olive Oil
Juice from 1 or 2 lemons
Salt, preferable big grain salt
Pepper
 
 
Preparation
 
We clean all fish and shrimp.
We boil all small fish with the shrimp in water with big grain salt for about 10-15 minutes.
 
We remove fish for the saucepan with a draining spoon.
 
In the broth in the saucepan we add the cod fish to boil for 15 minutes.
 
We remove the cod fish and put it on a plate.
 
We drain the broth and pour it in the saucepan again. We add potatoes cut in 2.
 
We add the onions cut in slices. We boil them for about 15-20 minutes.
 
In the end we stir the ESTI Olive Oil with the lemon juice and we add it in the broth. We could also mash one of the potatoes to make it thicker.
 
We remove all small fish and clean the shrimp and put them in the soup.
 
We clean the cod fish and put it on the plate again with a few of the soup broth.
